This is my go to dinner when I’m looking for something fast. I always have a batch of home made meatballs (beef, chicken or turkey) in the freezer.

Healthy Breakfast with Kale and Avocado
Been in the mood for kale lately. Massaged the kale with pumpkin seed oil, lemon and himalayan sea salt. Topped with an egg (over-easy) and added chunks of avocado.
